How I actually use it

Keep three wide-mouth quart Ball jars in rotation. That’s the whole system. One lives in the fridge. Two sit empty and clean, ready for feed day. On feed day I work the jars like this: Jar 1 is the mother starter coming out of the fridge. Scoop what’s needed from Jar 1 into Jar 2 for making today’s levain that will be used in 8 hours for dough. Weigh 100 grams of starter from Jar 1 into Jar 3. Feed it 100 grams Whole Wheat or All-Purpose Flour and 100 grams water. Stir, lid it, and put Jar 3 in the fridge. That is the ongoing mother. Use, give or toss what’s left in Jar 1, Wash it and put it back in the empty rotation.

What to know before you buy

The lids that come in the pack are for canning. Recommend using a cloth lid during counter fermentation and Ball Leak-Proof Plastic Lids for Mason Jars when storing in the fridge.
